Apparently, I’ve been on a food kick lately. Yesterday was the post about using leftover dip to make a pizza – which was Yummy! Today I want to share about the relish I made.
First a little back-story. For years, DH and I have been receiving a package at Christmas from a family member that orders from a certain mail order company that shall remain nameless. But the initials are H & D. The food is delicious and we look forward to it every year.
One of the items that we’ve received is a Pepper and Onion Relish that is really, really good. It can be used in a number of different recipes and is M-m-m M-m-m Tasty!!
Now, there is a sticks and bricks store for the unnamed mail order business that is not too far from us (relatively speaking). Every now and again we stop in there and pick up a few items, including a jar or two of the P&O Relish. But I have to admit that the products are a little pricey. I mean, they’re great as a gift, but for everyday consumption, it’s more than my little tightwad heart likes to spend. Especially because we could consume a jar of the relish once a week, if money were not a consideration. As it is, we dole it out pretty stingily.
After the latest trip to get some relish, something finally clicked in my brain. There’s this wonderful thing called the internet and there are lots of people out there who’s sole purpose is to develop recipes for foods that people love!!! BTW – No one ever accused me of being quick on the uptake!! It took me quite a few years to figure this out!!
Once the lightbulb finally clicked, it was just a matter of a few mouse clicks and I was able to find numerous recipes. Here’s a link to the one I chose – Daring Gourmet
Then, after a quick trip to the grocery store, I was in business.
Tuesday night I made seven pints of my very own pepper and onion relish!! Seven pints!!! At $1.90 per pint!! Wowsa!!! I’m sorry H & D, but I don’t think I’ll be going back for any more relish!
Yesterday, I made some dip with 1/2 cup relish and 8 oz. cream cheese and packed it for part of my lunch. Oh yeah, baby!
All this cooking and canning has taken me away from my quilting. But I think I’m going to spend the rest of the day sewing, since there’s been a blizzard outside since sometime in the middle of the night. (Well, maybe not a blizzard, but a lot of snow!!!)
